I’m sure most of you have heard of cake mix cookies before, but I had to share this one because it is my favorite version. It’s easy but delicious, so it’s great for the holidays when time is precious.
Ingredients:
- 1 chocolate cake mix
- 1/3 cup butter (softened)
- 2 eggs
- 2 tsp vanilla
- 1 cup Andes Peppermint Crunch baking chips
Preheat oven to 375. Mix together cake mix, butter, eggs, and vanilla until well blended. Dough will be very thick. Fold in peppermint chips with wooden spoon. Form 1 inch balls and bake for 8-10 minutes. Makes about 2 dozen cookies. Note: cookies will not look finished when your timer goes off, but they are done so don’t over cook them.
I took these to a cookies swap and they were a big hit. Hmm…I think that’s the first time I’ve ever used paper doilies for their intended purpose–food. =)
